Cooking Hawaiian Style – Sean Robbins’ Portuguese Sausage Omelet

Singer, songwriter Sean Robbins shares his go-to island comfort food recipe for Portuguese sausage omelette which is filled with rice in the middle of the omelette. FFind this and 1,000’s of Hawaiian and Hawaiian-style recipes at www.CookingHawaiianStyle.com.

Ingredients

  • 4 large eggs, scrambled
  • 1 cup cooked rice
  • 1 Portuguese sausage 8 oz., cubed 1”
  • 1 green onion (white and green parts), chopped small
  • 1/3 green bell pepper chopped, medium large pieces
  • 1/2 cup shredded jack cheese
  • 2 tablespoons butter or olive oil to fry sausage, veggies, and omelet
  • salt and black pepper to taste

Cooking Instructions

In a frying pan, add oil or butter and then add bell peppers. Cook for 2-3 minutes until tender. Add Portuguese sausage and green onions and cook until sausage is golden brown. Add eggs to sausage and pepper mixture and cook, slowly lifting edges.

Season with salt and pepper. When eggs are almost cooked through, add rice to center of omelet and sprinkle with cheese. Gently fold omelet in half.

Garnish

Chopped green onions (optional).
